Citrus Sugar Cookies

We've laced these classic sugar cookies with hints of citrus and cardamom. This recipe makes a nice rollable dough that's perfect for cut-outs.
- 1 1/2 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- zest of 1 lemon and 1 small lime
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon orange extract
- 5 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
In a mixing bowl, add the butter and sugar and cream together until light and fluffy. Add in the eggs, one at a time, and allow them to incorporate before the next addition.
Sprinkle in the vanilla, lemon and lime zest, cardamom, and orange extract. Mix to combine.
Sift the flour, baking powder, and salt together. Turn the mixer on low and add in the flour mixture in small increments, allowing each to incorporate before adding more.
Cover and chill the dough in the refrigerator for 1 hour. Preheat oven to 400 degrees.
Sprinkle a little dough on your rolling surface and roll the dough out to about ¼" (thicker for a slightly softer cookie). Make sure the dough isn't sticking to your surface while rolling. Rotate the dough and add more flour to the rolling surface if needed.
Use dough cutters to stamp out shapes, then place the cookies on silicone mat covered baking sheets (or parchment covered sheets).
Bake 7-9 minutes or until the edges just begin to turn a golden color. They will continue to set up after you remove them from the oven, so be sure not to overbake.
Allow the cookies to cool on the baking sheets for a few minutes, then remove to a cooling rack to cool completely. Decorate with your favorite frosting/icing/candy.
